This Cake Flour is an all-purpose flour. It has good water absorption and performs well even in demanding enriched doughs where elasticity is required. This flour is good for soft crust buns, focaccia, brioche, pizza bases and even laminated products such as croissants. It can also be used to make egg pasta sheets for filled pasta.
