In the Motherdough U pasta course we will make an egg pasta, and a sourdough pasta dough using Motherdough discard. We will use these doughs to produce tagliatelle, pappardelle, and stuffed cappelletti.
With pasta the hero, we will teach you to perfect 5 key Italian pasta dressings or sauces takes your pasta game to the next level. Once you master these, they become the backbone of many different dishes. Knowing how to nail these sauces (with secrets from Nonna), is the key to producing restaurant quality Italian food at home.
We will combine the pasta and these dressings to equip you with the basics you need to produce delicious, authentic and traditional Italian "primi" (first courses). You will discover the power of simplicity.
This is a full day course as we make and build each dish from scratch for maximum learning. Recipes will be provided.
At the end of the day you will know how to:
- Make fresh pasta from sourdough discard as well as a normal egg pasta
- Create handmade stuffed cappelletti
- Perfect 5 key Italian pasta sauce bases:
- Rosso (Tomato)
- Ragù - the real one from Bologna
- Bianco (Garlic, white wine, parsley)
- Burro Salvia (Sage, butter)
- Understand how to make a proper ragù - which is definitely not "bolognaise".

The course is held on from 9am to 5pm. It includes a light lunch. Every participant also receives a free Motherdough culture. In CPT the courses are held at the Motherdough Studio at our new address in City Centre . In JNB they are held in West Road South, Morningside.
You will receive more information via email regarding house rules, time, address and other important info you need to know closer to the time of the date you booked your course.

Bookings, Confirmation & Cancellations
We require booking and payment via our online system to confirm your registration. We understand that these are uncertain time and we would like to be as flexible as possible with our cancellation and rebooking terms.
We will offer a full refund on the course booking if cancelled within 14 days, for shorter periods we will offer a date change or a voucher to use on our store. For date changes within 7 days of the course start, a rebooking fee of R500 will be charged to change your date.
If we are able to fill your space with someone on the waiting list, you will have the option to change your date, ask for a voucher or get a full refund. We will also accommodate participant name changes up to the day of the course.
Outstanding. I was so looking forward to the pasta making and I was not disappointed. I learned so much more than just making pasta. Lance is generous in every way and has an incredible knowledge of Italian cooking. The way the course was planned, prepped and executed, meant we all participated in a non-threatening environment. Willem made sure we were all looked after in a quiet, unobtrusive way. The food was delicious. (Of course! We had made it!) I simply loved the whole day. Worth every penny.
