Sourdough Masterclass 2.0
In this course, we will tackle an enriched dough sweet bread, a rye / barley bread and revisit the classic Motherdough sourdough boule in a light rye version. This course be an opportunity to refresh and revisit some of the key outputs of the 1.0 course and your existing knowledge.
Baking with rye, barley & other low gluten flours or doughs containing lots of sugar and fat is challenging because of the technical limitations of getting structure into the dough. We will cover baking breads with these ingredients, mixing the dough, fermenting, shaping, proving and the final bake to the end product.
As a prerequisite for this course you should have some experience with sourdough baking, specifically understanding the fundamentals of the process, structure of recipes and maintaining a starter.
For this course we will use the Motherdough low gluten culture, Bruna and our 101-year old wheat culture, Alfonsina.
R1,600 per person - 9am to 5pm. Lunch & Motherdough cultures to take home are included.

The course is held on from 9am to 5pm. It includes a light lunch. Every participant also receives a free Motherdough culture. In CPT the courses are held at the Motherdough Studio in Woodstock (From April, CPT CBD). In JNB they are held in West Road South, Morningside.
Bookings, Confirmation & Cancellations
We require booking and payment via our online system to confirm your registration. We understand that these are uncertain time and we would like to be as flexible as possible with our cancellation and rebooking terms.
We will offer a full refund on the course booking if cancelled within 14 days, for shorter periods we will offer a date change or a voucher to use on our store. For date changes within 48 hours of the course start, a rebooking fee of R500 will be charged to change your date.
If we are able to fill your space with someone on the waiting list, you will have the option to change your date, ask for a voucher or get a full refund. We will also accommodate participant name changes up to the day of the course.

Thank you for the very informative and hands on course! I learned a lot about the science behind sourdough and it was great being able to experience the practical side first hand. Being a novice, I would have also enjoyed learning more of the sourdough basics and how to prepare and bake sourdough in with standard kitchen appliances and equipment.
